Scallopped Potatoes and Bad Food Luck

I don't know what's wrong with me lately . I am havin bad luck with food!
First it was the cookies that were devoured before I could get a picture of them and then it was the chicken pot pie I told you guys about in my last entry

I cheated and purchased a frozen deep dish pie crust. Unfortuantely it was a brand I wasn't familiar with and it was very oily and crumbly . I couldn't even get it out of the pie tin !!

I ended up tweaking the pie filling a bit and adding in some rice. We had it with a grilled cheese. Definately not what i wanted that night!

Last night I made some scallopped potatoes. These are closely tied with first for favorite kind of potato for me. They're up against creamy mashed.
When my friend hol's asked what kind of soup I used to make the potatoes, I figured I should just put the recipe up .

Oh and no soup involved .






Peel and scrub a couple good sized potatoes. I think these are russets but to be honest I have no idea.
Slice them thinly length wise.

While you're slicing the potatoes , turn your burner on 4 ( just under medium) and melt 2-3 tbsp of butter or whatever you like.

When the butter is melted , add in the same amount of flour as you did butter.
Mix it together until its thick and mixed in and kinda bubbling .

THen pour in about 1 1/2 cups of milk . I added some diced onion and garlic. Stir.
Allow it to come to a boil but watch it closely so it doesn't foam up into cloud of milk doom . When its thick enough . Turn off the heat and let it sit for a sec.

Layer half of the sliced potatoes in a casserole dish.

Then pour half of the milk concoction over top . Add some cheese if you want to be like me.

Add the rest of your potatoes and pour the rest of the milk concoction over top .
Sprinkle breadcrumbs on top of the potatoes and top with some shredded cheese.
Scallopped Potatoes
2-3 good sized potatoes , peeled and washed. Sliced lengthwise thinly.
2-3 tbsp margarine or butter
2-3 tbsp flour
1 1/2 cups milk
1/2 onion finely chopped
1/2 cup grated cheese
1/4 cup breadcrumbs
Over medium heat , melt butter in a sauce pan . Add flour and stir until mixed. Add milk and onion and bring to a boil . When thick , remove from heat.
Layer half of potatoes in a casserole dish . Pour half of milk mixture on top . Add remaining potatoes and milk mixture. Top with breadcrumbs and grated cheese.
Bake at 350 covered for 40 minutes and then for 30 minutes uncovered .

  1. Am going to try your scalloped potatoes. It's similar to my mom's recipe, but we never thought of bread crumbs! I hope you never remove your blogs here b/c one day I'm gonna take time to try out all the recipes (when I dont have to much school crap to do).

  2. This recipe is my mom's recipe. I ve seen other people add the flour directly to the potatoes uncooked which never makes for very yummy potatoes baked.

    LOL Im flattered, most of the recipes are just things I throw together , end up liking and repeating.

    The breadcrumbs are key to getting a crisy brown top. I add them to baked pasta and mac and cheese too.
